- Prepare 1 onion

Put the courgette in a clean tea towel and squeeze tightly to remove any liquid. Tip into a large bowl and add the carrot, halloumi, onion, breadcrumbs, cumin, coriander, salt, eggs and flour. Adding grated courgette produces a lovely juiciness to these turkey burgers, topped with a melting slice of mozzarella and served with a fresh coleslaw. Put the turkey mince into a large bowl.
Steps to make Beef and Courgette Burgers:
- Grate the courgette and onion, and place in a large mixing bowl.
- Chop the garlic into small pieces and add to the mix.
- Add the herbs, tomato purée and mince, and season with salt and pepper.
- Mix with your hands until thorougly combined.
- Shape the mix into four balls of equal size, and press flat into a burger shape, approximately 2cm in height.
- Heat the oil on a medium heat in a frying pan.
- Fry the burgers for approximately 5 minutes on each side, until they are nicely browned.
- Layer the burgers in the baps with mixed leaves and tomato slices.
Take the grated courgette in handfuls and squeeze well to remove excess water, before adding to the bowl. A delicious vegetarian burger recipe, with crisp, golden courgette fritters and a juicy mushroom drenched in melted cheese. The courgette fritters would also work well eaten for brunch - try topping with a soft poached egg or strips of grilled bacon. This veggie burger would pair perfectly with a glass. Assemble the hamburger as follows: Arrange the lettuce and onion on the lower half of each roll, then carefully place the burger, tomato and courgettes on top.
